James & Co’s varietal foundation is Sangiovese…we love it. We love the sour cherry & spice, the acidity & length, the depth and complexity of flavour and structure and importantly the versatility of wine style. We are very lucky to source our fruit from one of the most diverse Sangiovese vineyards in Australia and this delicate sparkling wine has been made from a clone we have selected for its subtlety, soft fruit and thinner skins.
Made using traditional bottle fermentation, followed by only a couple of months ‘on lees’ to retain freshness, the wine is a lovely pale pink colour with cherry and floral aromas, has a soft creamy palate, lingering cherry flavours and a dry finish. It is a serious sparkling wine intended to be enjoyed with minimal seriousness.
